Okinawa Spinach

Okinawa Spinach is a perennial shrub originating from the pacific islands.  It grows to about two feet tall and seems to be thriving here in our garden.  Its leaves are green on the top and bright purple on the bottom.  They have a nice crunch and a unique but subtle flavor.

Dressed with an Italian vinaigrette, this harvest became an impromptu salad that was sampled by many students in the dining hall.  (Once again, many thumbs up and no left-overs.)

Look for these beautiful leaves to show up in the pasta salad on next weeks lunch menu.
